A few recipes to warm your belly
Traditional Hot Chocolate :
In a double boiler melt 12 ounces of chopped semi sweet chocolate. Stir in 2 pints of heavy cream and heat just until boiling, stirring frequently. Serve with big whumping spoonfulls of whipped cream.
Mexican Hot Chocolate:
Slice open one fresh ancho chili pepper, discard seeds. Combine chili, 4 cups of milk, and 2 cinnamon sticks. Heat until boiling; let steep for 10 minutes. Remove from heat – Remove chili and cinnamon sticks. and add 4 ounces chopped semi sweet chocolate. Return to heat and whisk until chocolate is melted. – Enjoy!
Vanilla Hot Chocolate:
In saucepan combine 4 cups of milk with 2 vanilla beans, split lengthwise. Heat until just boiling. remove from heat, Scrape the seeds from the vanilla beans into the milk. Let stand covered for 5 minutes. Return to heat and add 8 tablespoons of cocoa powder whisk until frothy.
Mint Hot Chocolate:
In saucepan combine 4 cups of milk with 6 sprigs of fresh mint. Heat until steaming, and let sit for 5 to 10 minutes covered. Strain to remove mint then return to heat and add 4 oz of milk chocolate. Whisk until chocolate is melty and milk is frothy.
